The left joystick will lead the receiver in the direction that you are holding it. The less accurate QB's may not be that great at this and may over/underthrow but it is still a helpful tool because it gives you the power to determine what general direction the QB throws in and it is extremely effective in 10, even if your QB sucks you at least know that if he makes a bad throw while you are holding the stick to the left, he is going to misfire the ball to the left and not somewhere where you had no intention of throwing the ball. The L2/LT will help the QB to set his feet and will therefore make him slightly more accurate, but only do this if you are set in the pocket and not being hit. Hope this helps!
